The classic Spanish recipe Paella (translated from Spanish Paeya) can be considered a classic of Spanish traditions in the preparation of the national dish. You will not find anything difficult in the recipe; all the ingredients can be purchased at any grocery store. But the most important thing in the recipe for cooking is high-quality products, without which all the taste and aroma will be lost.

Ingredients for Paella (Paella) recipe:

  • Long parboiled rice - 500 gr.;
  • Extra virgin extra virgin olive oil - 0.3 l.;
  • Saffron herb - 0.5 tsp;
  • Hot fish broth - 0.6 l;
  • Hot chicken broth - 0.5 l;
  • Chicken breast - 1 kg;
  • Jamon (or any other raw smoked ham) - 50 gr.;
  • Shrimps and mussels - 0.5 kg each;
  • Halibut fish fillet - 0.4 kg;
  • Squids - 0.2 kg;
  • Onion head;
  • Two heads of garlic;
  • lemon - 1 pc;
  • Ripe tomatoes - 2 pcs.;
  • Sweet red pepper - 2 pcs.;
  • Parsley, fine salt, ground pepper.

Cooking process according to the real Paella recipe

So we begin to translate the Paella recipe into reality. We begin to cut jamon, chicken, squid and fish into cubes of about 1 cm; onion mode in half rings, and cut the pepper into long strips.

Further, according to the recipe, we begin to scald the tomatoes with boiling water, after which you can easily peel off the skin, remove the seeds. Grind the garlic and parsley as soon as we can, add fine salt and saffron herb (this process is best done with a blender). In addition to this process, we set the rice to boil, then after cooking the rice we rinse it several times and let the water drain well. Now we begin to use heavy equipment in the preparation of the dish. Set a huge frying pan (if there is a cast-iron pan, it will be just great) on maximum heat and add extra virgin olive oil and heat. We begin to fry raw smoked ham or jamon, after the formation of a small crust, put it on a plate.

It is better to take a larger plate, because everything fried will fold there. Now, in turn, fry the chicken, then fish, squid and, lastly, shrimp, everything is fried to a small crust. By the way, fry the shrimps on the fire for no more than 2 minutes, otherwise they will become tough.

Next, according to the recipe, take another pan and begin to fry the onions and tomatoes until they become a little soft. Mix all the ingredients that have been fried in one pan and add the mussels, as well as the previously prepared composition of garlic, saffron and salt.

it was time to add rice, then pour over the juice of squeezed lemon, put the pan on high heat and fry all the products for 2 minutes. After the next frying, add hot fish and chicken broths. Bring all this mass to a boil and reduce the heat. Having closed all this mass with a lid, the process of stewing the dish begins, which will last 20-25 minutes. During the entire stewing time, do not try to stir. The main thing is to follow the Paella recipe and the traditional Spanish dish will turn out to be simply magnificent.

Well, after everything has gone out, it's time to remove the pan from the heat. Now the whole frying pan needs to be shaken well, for this we call the man to the kitchen again.
